"GINGER SQUEEZE" is an original flavor perfect for winter, with a refreshing and juicy taste like biting into freshly harvested ginger, a sharp spiciness, and an accent of Japanese pepper. The spiciness of the "gingerol" contained in ginger is intertwined with kombucha, creating a gentle sweetness and thick texture created by fermentation. Refreshing and thick. After drinking it, you will feel warm from deep inside. This is the ultimate kombucha that will blow away the cold of winter.

Environmentally friendly initiatives

Based on the company philosophy of "Filling the Earth with Smiles," the Oizumi Factory promotes environmentally friendly initiatives and practices a circular economy by composting food waste from the cafe and brewery on the company's premises, and using that compost to prepare vegetables grown on the company's own farm, which are then served at the cafe.

"GINGER SQUEEZE" is made using ginger that Oizumi Farm staff and _SHIP KOMBUCHA brewers spent about seven months growing from seed to harvest in order to "give shape to the circular economy." Oizumi Farm's ginger is grown in nutrient-rich soil regenerated by composting tea grounds from the kombucha production process, so no pesticides or chemical fertilizers are used during the cultivation period.

Ginger that has been carefully grown over a long period of time is rich in moisture and has a mild spiciness. It is carefully extracted using the cold press method on the day it is harvested, tightly sealing in the refreshing aroma of freshly picked ginger.

About "_SHIP KOMBUCHA"

KOMBUCHA is a plant-based, slightly carbonated beverage called "fermented sparkling tea" made by adding sugar to tea and fermenting it with "SCOBY", a mixture of acetic acid bacteria and yeast. "_SHIP KOMBUCHA" is a brewery that specializes in kombucha, and is committed to a non-heating method of brewing. From tea extraction to fermentation and bottling, the brewing process is done carefully and slowly by skilled craftsmen.

We use only natural ingredients, such as organically grown ones, without adding any fruit juice, flavorings or preservatives, and obtained JAS organic certification in January 2023. Please enjoy the fruity acidity reminiscent of white grapes and pears and the umami flavor derived from fermentation.
