Concept

The menu offered at Oizumi Factory + CULTURE is "wellness food" that brings harmony to the mind, body, and earth. Each menu item is made with a focus on fermented, plant-based ingredients, providing sustainable choices that are kind to both the body and the environment.

Based on this new concept, the restaurant will offer wellness food made with domestic vegetables and plant-based ingredients, with a menu supervised by fermentation designer Hiraku Ogura.

1. Fermentation
Fermentation is an ancient method to bring out the power of ingredients. Fermented foods, which are rich in probiotics, improve the intestinal environment and contribute to improving immunity and mental stability. At Oizumi Factory + CULTURE, we use the natural power of fermented ingredients to support physical and mental health.

2. PLANT BASED
Plant-based ingredients are easy to digest and provide an energizing meal. In addition, not using animal products reduces the burden on the global environment. We value harmony with nature and propose meals that are kind to the body and the environment.

3. Natural ingredients
We use natural ingredients carefully grown by our producers, and our cooking methods minimize processing to bring out the original nutrients and flavors of the ingredients. The natural flavors with fewer additives provide greater satisfaction and health benefits.

From Japan to the World "ZEN BOWL"

The signature menu of Oizumi Factory + CULTURE, "ZEN BOWL", is wellness food that combines the plant-based philosophy cultivated by Oizumi Factory with Japanese traditions. Based on the spirit of ancient shojin ryori (vegetarian cuisine), the menu uses plant-derived ingredients and the wisdom of fermentation without using animal products, and offers flavors that are good for the body and mind.

In addition, by not using ingredients with strong scents such as the "five pungent vegetables" (chives, garlic, shallots, green onions, and chives), we are able to provide meals that are even less stimulating.

The ingredients used are as domestically produced as possible, and the cooking methods used bring out the best in nature, making it an environmentally friendly and sustainable choice.

The probiotics produced during the fermentation process improve the intestinal environment and boost the body's immunity, supporting daily health. Through this "ZEN BOWL," we hope to spread new values ​​that combine Japanese food culture with modern wellness both domestically and internationally, proposing a step toward a sustainable future.
